Potatoes have been a dietary staple in the US and the world for centuries. Potatoes contribute key nutrients to the diet including vitamin C, potassium, and dietary fiber.
Conversely, some observational data link potato consumption to an increased risk of weight gain and type 2 diabetes purportedly due to the potato’s high glycemic index (GI), therefore including potato with spring onions (a cup of cut scallions has about 10% of the fiber you need for the whole day) and some other valuable ingredients helps in consuming potatoes without bothering about its high GI content.
