It is a luxury to have paratha or stuffed flatbread for breakfast or brunch because it’s a filling, nutritious and delicious food – the filling of the stuffed paratha is the delicious factor.
Why did I opt for carrots as filling for the paratha?
Because carrots have a pleasant-sweet flavour, this flavour of carrot easily blends with flavours of other ingredients; on the nutritious aspect, carrot is a source of variety of nutrients and is especially rich in provitamin A beta-carotene – beta carotene is an antioxidant that can be found in yellow, orange, and green leafy vegetables and fruits.
So how did I make the carrot filling delicious and healthy?
- It took me only two ingredients to flavour the carrot mince filling
- One of the ingredients imparted carrot mince filling with rich texture and flavour, the other ingredient imparted pleasant mild-pungent flavour; so the carrot filling of this paratha has the pleasant combine flavour of sweetness, spiciness along with a rich luxurious flavour and texture

The Recipe of Stuffed Caŕrot Paratha/Flatbread:




Quantity of red carrots: approx. 1 kg
Whole wheat flour dough: Knead whole wheat flour using water into smooth dough – The Indian Flatbread (Chapati)
Carrot Stuffing for Paratha: Blend carrot mince and finely sliced pieces of 3-4 green chilli peppers (I used thick, green chilli peppers for this recipe, which has pleasant mild-pungent flavour) in warm ghee – clarified butter (3tbsp.), smidgen the mix with salt, add the mixture with 1/4 tsp. of turmeric powder, cook the mix for approx. 5 minutes in low heat
Roll the dough into medium dough balls – according to the size of paratha you prefer, place the dough ball on a smooth wooden surface/rolling board, sprinkle whole wheat flour on the dough ball, use a rolling pin to flatten the dough ball into a circle formation of reasonable thickness, top dough circle with a tbsp. of carrot stuffing on half of its part, fold the circle ends and press its ends with a fork
Dry-roast the stuffed flatbread on both its sides in an iron tava/frying pan
The carrot mixture is a filling for approx. 13 parathas
The carrot stuffed flatbread has the pleasant-sweet flavour of carrot mixed with pleasant-pungent flavour of green chilli pepper along with richness of ghee.
