The Recipe of Pleasant Spicy, Sweet-and-Sour Yam Fries:
Quantity of Root Vegetable: approx. 500gm of Yam
Slice the yam into reasonable thin slices
Marinate the yam slices for approx. 10 minutes in:
- smidgen of salt – according to preference of flavour
- 1/2 tsp. of turmeric powder – known for its antioxidant, anti-inflammatory and anti-carcinogenic properties
- 1 tsp. of sambhar masala (this spice powder mix is a blend of these ingredients: coriander, chilli, fenugreek, cumin, curry leaves, edible common salt, Bengal gram, green gram, black gram, black pepper, cassia bark, turmeric, asafoetida and refined cottonseed oil)
- 2 tbsp. of chilli vinegar – this vinegar has the pungent aroma of the green chilli however the flavour of this vinegar is pleasant sweet & sour
I opted to fry the yam slices in an iron tava. (Tava is metal concave frying pan used to make flatbread. Iron tava is heat efficient, naturally non-stick and chemical-free cookware.)
Oil the iron tava with minimum quantity of any mild-flavour vegetable oil with the help of a spoon, pan-fry the yam slices in medium heat; place adequate number of marinated yam slices on the warm tava, immediately turn the yam slices until its well coated with oil on both of its surface, then fry the yam slices consecutively on each of its sides until its surface turns crispy.

These fries have the pleasant spiciness of sambhar masala and pleasant sweet-sour flavour of chilli vinegar; with the inclusion of chilli vinegar in the marination of yam slices, the flavour of these yam fries become more delicious.
