Raw vegetable salad is an important part of our daily meal, daikon or winter radish with its crispy texture and slightly sweet yet slightly spicy flavour is a suitable taproot vegetable to be eaten raw during meals as a side dish in the form of raw vegetable salad.
The other important reasons for eating daikon raw are:
- Daikon is a low-calorie, high-fiber vegetable containing nutrients, particularly vitamin C and folate.
- Daikon contain plant compounds like polyphenol antioxidants ferulic acid and quercetin, both of which have anti-inflammatory, anticancer, and immune-boosting properties.
- Eating cruciferous vegetables like daikon may particularly protect our body against many diseases – cruciferous vegetables are high in vitamin C and soluble fiber and contain multiple nutrients and phytochemicals; they contain glucosinolates which are under basic research for their potential properties of affecting some types of cancer.
