When spring onions/scallions are cooked along with chicken meat, the gravy has a matchless amazing flavour with the dominant savoury flavour of spring onions; earlier, I had created a pulao recipe with these two food ingredients … Nutritious Food Recipe of Pulao/Pilaf using spring onions and chicken meat, in which tomatoes and green chillies are the merging flavours with spring onion and chicken meat; in this gravy recipe, a spicy onion paste is merged with the flavours of spring onion and chicken meat that arouses the taste buds.
The Recipe of Chicken Gravy made Savoury with Spring Onions/Scallions:
Quantity of chicken meat: approx. 500gm = 1/2 kg
Quantity of spring onions or scallions: a generous handful of spring onions with its greens
Onion paste: Grind pieces of a medium onion, 4 -5 garlic cloves, tiny pieces of a small portion of ginger root, a tbsp. of chilli vinegar or any other vinegar – according to preference of flavour; into smooth paste using tad quantity of water.
Saute the onion paste in adequate quantity of warm, any mild-flavour vegetable oil, until the paste emits a pleasant aroma; blend the chicken meat pieces with the onion paste, followed by spring onion pieces; add the mixture with adequate quantity of water for gravy – according to the consistency of gravy you prefer; cook the gravy until the chicken meat pieces turn tender; blend the mixture with smidgen of salt – according to preference of flavour, 1/4 tsp. of turmeric powder, 1 tsp. of sambhar masala or any other garam masala – according to preference of flavour.
The flavour of spring onions/scallions is dominant in the gravy, the flavour of chicken meat and of other ingredients combine well for a delicious gravy.
