The Recipe of Exotic Chicken-Amaranth Gravy:
Quantity of amaranth leaves: 1 generous bunch = 5-6 handfuls of sliced leaves
Quantity of chicken meat: approx. 500 gm = 1/2 kg
Onion paste: Grind finely sliced pieces of 1 medium onion, 5 garlic cloves and tiny pieces of a small portion of ginger root – you can opt to add ginger according to preference of flavour, into smooth paste using water.
Blend the onion paste with adequate quantity of warm, any mild-flavour vegetable oil; when the onion paste starts emitting a pleasant aroma, add the mix with chicken meat pieces and sliced pieces of amaranth leaves; let the chicken meat cook in the amaranth gravy; when the chicken pieces are cooked, turn off the heat; blend the chicken meat gravy with smidgen of salt – according to preference of flavour, 1/4 tsp. of turmeric powder and 1 full tbsp. of egg mayonnaise – you can also opt to add veg mayonnaise.
