Quantity of potatoes: approx. ½ kg

Quantity of French beans: approx. 250 gm

Add small potato pieces to adequate quantity of warm, any mild-flavour vegetable oil; when the potato pieces are warm enough, add small pieces of French beans to the mix; add the mixture with handful of finely sliced pieces of curry leaves, small pieces of a green chilli – for mild pungent flavour (these chillies are small and extremely slender, having fresh pungent flavour), pieces of a cheese cube, and 1/4 tsp. of turmeric powder; smidgen the mix with salt – according to preference of flavour, pour adequate quantity of water for the vegetables to cook, cook the vegetable mix until the vegetables turn tender.

Quantity of potatoes: approx. ½ kg

Quantity of paneer (cottage cheese): approx. 100 gm

In an iron wok/kadai, in a  heapful tsp. of ghee (clarified butter), add ¼ tsp. of mustard seeds; when the mustard seeds begin to crackle, add a handful of sliced curry leaves in the warm ghee; blend the mix with small potato pieces, add the mixture with sliced pieces of a green chilli for mild-pungent flavour (these chillies are small and extremely slender, having fresh pungent flavour) and ¼ tsp. of turmeric powder, smidgen the blend with salt – according to preference of flavour, add adequate quantity of water for the potato pieces to cook; when the potato pieces are par-cooked, add small paneer cubes; cook the mixture until the potato pieces soften.

Quantity of vegetables –

Legume:  Approximate 250 gm of green pea pods

Potatoes:  Approximate 250 gm

Add mashed pieces of 4 garlic cloves in adequate quantity of warm, any mild-flavour vegetable oil (I blended the oil with leftover oil used to fry a non-vegetarian food for flavour – optional), blend the mix with fresh green peas and potato pieces, smidgen the mix with salt – according to preference of flavour, add the mix with ¼ tbsp. of turmeric powder and ¼- ½  tbsp. of aagri masala (a rustic blend of spices from the Agri folks of Maharashtra, this masala/spice mix has a distinct lovely flavour with moderate level of pungency) or any other garam masala – according to preference of flavour, blend the mix with ½ a glass of water for the vegetables to cook, cook the vegetable mixture until the vegetables turn tender.

Quantity of Baby Potatoes – 1/2 kg

In a warm blend of generous quantity of (pasteurized, salted) butter and little quantity of any mild flavour vegetable oil, sauté mashed pieces of about 10 garlic cloves, and sliced pieces of baby potatoes; smidgen the mixture with salt – according to preference of taste,

Add finely sliced pieces of 2 green chillies ( – if you prefer these potatoes in mild pungent flavour opt to add only one green chilli instead of two), sliced pieces of a handful of curry leaves and ¼ tsp. of turmeric powder to the mixture,

Blend the mixture with adequate quantity of water, just right, for the potato pieces to cook.

When the potato pieces soften and the water evaporates, the preparation is done.

The potatoes will have a pleasant spicy flavour.
