A taproot is a large, central, and dominant root from which other roots sprout laterally; thus taproots are abundant source of nutrients.
Here are 2 salad recipes of nutrient-rich taproots, beetroot and radish:

Beetroot Salad:
Quantity: a medium golden beet
Boil the beetroot until it turns tender, slice the beetroot after it cools down, flavour the beetroot slices with a pinch of salt and ½ tsp. of chilli vinegar (this vinegar is not pungent in flavour, has a flavourful pungent aroma) or any other vinegar of your preference.
Serving size: approx. 2
Radish Salad:
Quantity: 5 slender long white radish (daikon/winter radish)
Add ¼ tsp. of mustard seeds in warm, adequate quantity of rice bran oil (or any other mild-flavour vegetable oil); when the seeds begin to crackle, blend the mixture with finely sliced pieces of white radish followed by generous handful of fresh coconut meat mince; smidgen the mix with salt – according to preference of flavour, add the mix with ¼ tsp. of turmeric powder, blend the mix with adequate quantity of water; cook the mixture until the liquid dries up to tender the white radish slices.
A radish salad with the strong flavour of delicious coconut meat minces.
Serving size: approx. 6
