Tava is metal concave frying pan used to make flatbread, however this cookware can also be used to cook other thick gravy based food.
In this recipe of luscious tava paneer gravy, I used an iron tava to prepare thick gravy for paneer (cottage cheese); while cooking this paneer gravy on the iron tava, I found that the iron tava is heat efficient because the cooking time required was significantly reduced.
The benefits of cooking in iron cookware are: iron cookware are chemical free, and research reveal that food cooked in iron cookware increase levels of iron in foods. (Iron is a vital nutrient because it is an important co-factor required for a number of essential cell functions.)
The Recipe of Luscious Tava Paneer Gravy:

Quantity of paneer (cottage cheese): approx. 100 gm
- In a concave iron tava, saute finely sliced pieces of 3 medium tomatoes in warm, adequate quantity of any mild-flavour vegetable oil; smidgen the mix with salt – according to preference of flavour; when the tomato pieces get partially melted, add 2 handfuls of finely sliced pieces of scallions; when this mixture condenses, add 1/2 tsp. of aagri masala ( this spice mix is fantastically flavourful and has a moderate level of pungency, or you can opt to add any other garam masala – according to preference of taste) and 1/4 tsp. of turmeric powder; blend the vegetable mix with small paneer cubes; when the paneer cubes turn slightly crisp on the surface, switch off the heat, add thick curd (approx. 80 gm) – whisk the curd before blending it with the paneer mixture.
A delicious paneer gravy of slight-sour and pleasant-spicy flavour.
Serving size: approx. 2
Serve this paneer gravy with simple pulao/pilaf flavoured only with whole spices.
