The skipjack tuna a very important species for fisheries, is a streamlined, fast-swimming, medium-sized, pelagic fish in the tuna family; common in tropical waters throughout the world, it is otherwise known as the balaya, aku, arctic bonito, mushmouth, oceanic bonito, striped tuna, or victor fish.

Fish frying is a technique which varies according to the type of fish, frying dissimilar categories of fish in the same method is not a wise decision, each type of fish does need a different technique of frying; with skipjack tuna the frying method differs when compared to other fishes mainly because its a meaty fish. Fish frying technique chiefly involves regulating the heat while frying the fish, with skipjack tuna the frying technique is at a gentle pace.

Quantity of Fish: 2 Skipjack Tunas

¤ Marinate the skipjack tuna fish pieces for 10-15 minutes in:

  • 2 tbsp. of chilli vinegar (this vinegar is not pungent in flavour, has a flavourful pungent aroma)
  • ½ tsp. of turmeric powder (turmeric is a known antioxidant, anti-inflammatory and anti-carcinogenic agent)
  • ½ tsp. of aagri masala for mild-pungent flavour (a rustic blend of spices from the Agri folks of Maharashtra, this masala/spice mix has a distinct lovely flavour with moderate level of pungency) or any other garam masala – according to preference of taste (Garam masala is the roasted powder mix of many spices such ascoriander, cumin, black pepper, chilli, cassia leaf, cassia, clove, black cardamom, anistar, fennel seeds etc. The flavour of garam masala varies according to the composition of different spices and ingredients in it; every brand of garam masala available in the market is dissimilar in taste, you may also find different varieties of garam masala of the same brand.)
  • smidgen of salt – according to preference of taste

¤ In adequate quantity of warm, rice bran oil (this oil is less viscous thus it does not stick to food and rice bran oil is made from bran which makes it rich in vitamin E), shallow fry the skipjack tuna fish pieces; after placing the fish pieces to fry (in adequate numbers  – up to 3-4 fish pieces at a time) in medium heat, instantaneously turn the fish to its other surface, reduce the heat to low and rotate the fish pieces at infrequent intervals, fry the skipjack tuna fish pieces in low heat for approximate 5 minutes.

Skipjack tuna fish is meaty, the fried pieces retain its unique flavour, the marinade combine the fish pieces with rich umami flavour.

For a  balanced  or healthy diet, combine seafood with veg dishes such as lentil soup and raw vegetable salad along with staple food made of rice or wheat.
