Nutritious Food Recipe of Pulao/Pilaf using spring onions and chicken meat

Rice is the staple food of over half the world’s population.

In Hinduism, rice holds great spiritual and ritual significance, rice is revered as a potent symbol of auspiciousness, prosperity and fertility.

In this recipe of pulao, I have merged rice with greens – green is the color of life, renewal, nature, and energy.

A pulao recipe using spring onions for its awesome flavour and nutrition value, and chicken meat for its protein content and delicious flavour.

The Nutritious Food Recipe of Pulao:

Quantity of rice: 2 small cups of basmati rice = approximate 250 gms.

  • For cooking the rice, pour the rice in a thick bottom, medium-size, handi  or saucepan; rinse the rice for about 2–3 times, then immerse rice in water – filled almost up to the utensil’s  brim,  add a tsp. of salt, keep the rice for cooking in medium heat, when a thick layer of cooked rice floats on top  – switch-off  the stove, and  completely drain the water, reheat the cooked rice at low-heat for about 1 second, and cover the utensil for few minutes.
  • In adequate quantity of warm ghee, sauté: finely slice pieces of 6 small tomatoes and finely sliced pieces of a handful bunch of spring onions (containing 15 small spring onions) along with its greens,  finely sliced pieces of 2 green chillies for mild-pungent flavour (optional); smidgen the mix with salt – according to preference of flavour. When the mixture condenses to a reasonable degree, blend the mix with pieces of ½ kg chicken meat , ¼ tbsp. of turmeric powder. Cook the mix until the chicken pieces are tender and the vegetable mix turns into thick gravy.
  • On a very thick layer of warm cooked basmati rice at the bottom of a medium-size, handi  or saucepan, evenly spread the warm chicken meat gravy; again add a thick layer of rice to top with the meat gravy, and repeat the same the third time too; cover the utensil for some time for the rice to soak up the flavour of the meat gravy.

You can enjoy this delicious and healthy pulao/pilaf with whisked, plain curd flavoured with a pinch of salt.
