A easy vegetarian food recipe of delicious, moderate-spicy, red beans gravy:
Quantity of Rajma/Red Beans: 1 small cup full of small beans of rajma (about 125 gm)
- Soak the red beans for overnight; cook the beans using a pressure cooker,
- In adequate quantity of warm, any mild-flavour vegetable oil, add mashed pieces of about 12 garlic cloves; when the garlic cloves pieces turn tad-brown in colour, add finely sliced pieces of 4 tomatoes to the mix; add finely sliced pieces of about 250 gm of potatoes to the mix; add a handful of finely sliced pieces of coriander leaves to the mixture with 2 green chillies – for medium pungent flavour (optional), ¼ tsp. of turmeric powder and ½ tsp. of sambhar masala – for moderate-spicy flavour [a non-pungent powdered spice mix, this spice powder mix is a blend of these ingredients: coriander, chilli, fenugreek, cumin, curry leaves, edible common salt, Bengal gram, green gram, black gram, black pepper, cassia bark, turmeric, asafoetida and refined cottonseed oil]; smidgen the mix with salt – according to preference of taste,
- Add adequate quantity of rajma stock for the potato pieces to cook; once the potato pieces are cooked, mash the potato pieces for a thick gravy for the rajma; add the cooked red beans to the warm mix, cook the combination until the rajma has blended well with the potato spicy gravy.
