The Recipe of Yam Gravy:
- Sauté finely sliced pieces of 3 small onions in adequate quantity of warm, any mild-flavour vegetable oil (you can also opt to re-use oil used to fry any non-vegetarian food for flavour),
- Add ½ tsp. of fenugreek seeds and mashed pieces of 8-10 garlic cloves to the blend,
- Blend the translucent onion mix with finely sliced pieces of 3 medium tomatoes,
- Merge small cube pieces of ½ kg yam to the melted mixture,
- Blend the yam mix with a handful mix of finely sliced pieces of curry leaves and coriander leaves, finely sliced pieces of a green chilli for mild-pungent flavour, ½ tsp. of turmeric powder, ½ tsp. of shahi garam masala (some of the ingredients of this spice mix are coriander, chilli, cumin, salt, fennel, lichen, cassia bark, star anise, black cardamon, bay leaf, caraway, triphala, black pepper, clove, etc.); smidgen the mix with salt – according to preference of flavour, add a glassful of water for gravy, cook the mix until the yam pieces soften.
