Seafood Recipe: Special Silver Pomfret Fish Fry

The soft and buttery silver pomfrets in sambhar masala – this spice powder mix is a blend of these ingredients: coriander, chilli, fenugreek, cumin, curry leaves, edible common salt, Bengal gram, green gram, black gram, black pepper, cassia bark, turmeric, asafoetida and refined cottonseed oil.

The Recipe of Special Silver Pomfret Fish fry:

Quantity of fish: 9 small silver pomfrets

Silver pomfret fish is scaleless thus this fish is extremely easy to clean.

  • Marinate the silver pomfret fish in: Juice of a small lemon, smidgen of salt – according to preference of flavour, ¼ to ½  tsp. of turmeric powder, 1 full tsp. of sambhar masala – a non-pungent spice mix,
  • Marinate the fish for at least 10 minutes in the marinade,
  • Coat the marinated fish with the mixture of wheat flour & semolina before frying the fish in adequate quantity of warm, any mild-flavour vegetable oil – preferably rice bran oil as this oil is less viscous; shallow-fry the fish for less than 5 minutes in medium to low heat, until the outer part of the fish turn crisp in texture.

The subtle flavour of sliver pomfret fish blends splendidly with the elegant-spicy flavour of sambhar masala.
