Aagri masala is a rustic blend of spices from the Agri folks of Maharashtra; the ingredients of this powdered spice mix are chilli, turmeric, black pepper, cloves, mustard seeds, poppy seeds, mace, black cardamon, green cardamon, bay leaf, star anise, stone flowers & salt.
The Recipe of Guar/ Cluster Beans – Flavourful with Aagri Masala:
- In adequate quantity of warm, any mild-flavour vegetable oil ( I had used sunflower oil) sauté mashed pieces of 4-5 garlic cloves, add mash of 3 medium red-ripe tomatoes; smidgen this mixture with salt – according to preference of taste,
- Add finely sliced pieces of 250 g of cluster beans to the melted mixture, blend the combination with ¼ tsp. of turmeric powder and ½ tsp. of aagri masala for mild-pungent flavour – this spice mix is fantastically flavourful and has a moderate level of pungency, blend the mixture with adequate quantity of water for the pod pieces to turn tender.
