… in the strong pungent flavour of garlic & green chillies

The Recipe:
- In a warm blend of generous quantity of (pasteurized, salted) butter and little quantity of any mild flavour vegetable oil, sauté mashed pieces of about 10 garlic cloves, and sliced pieces of about ½ kg baby potatoes; smidgen the mixture with salt – according to preference of taste,
- Add finely sliced pieces of 2 green chillies ( – if you prefer these potatoes in mild pungent flavour opt to add only one green chilli instead of two), sliced pieces of a handful of curry leaves and ¼ tsp. of turmeric powder to the mixture,
- Blend the mixture with adequate quantity of water, just right, for the potato pieces to cook.
When the potato pieces soften and the water evaporates the preparation is done.
The potatoes will have a pleasant spicy flavour.
