Golden Anchovies/Mandeli Fish – ANCHOVIES are small, common salt-water forage fish; its 144 species are placed in 17 genera; they are found in the Atlantic, Indian and Pacific Oceans, and in the Black Sea and the Mediterranean Sea. Anchovies are classified as oily fish (- oily fish meat is a good source of vitamins A and D, and is rich in omega-3 fatty acids). Quantity of fresh golden anchovies: About ½ kg
Golden Anchovies/Mandeli fish is quite scaly and has to be thoroughly cleaned.
- Marinate the golden anchovies for 15 to 20 minutes in: ½ tsp. of turmeric powder, a full tsp. of kashmiri chilli powder or any other chilli powder of high pungency, ½ tsp. of garam masala – any garam masala of your preference, salt- according to preference of taste, and one whisked egg.
- Deep fry the marinated golden anchovies, in adequate numbers, in medium to low heat in a shallow frying-pan with adequate quantity of warm rice bran oil (- this oil is less viscous thus it does not stick to food and rice bran oil is made from bran which makes it rich in vitamin E).
The fish gets fried immediately within 5 minutes; fry the fish until tad crisp.
