The Recipe:
Quantity of chicken wings/chicken lollipop pieces: 1kg
- Marinate the chicken meat pieces in a marinade of these ingredients for at least ½ an hour –
Whisk all these ingredients together for the marinade:
3 eggs
½ tsp. of turmeric powder
2 tbsp. of finely sliced pieces of fresh lemon grass (the thin, long leaves of lemongrass)
1 tsp. full of freshly ground black pepper
Salt – according to preference of taste
- Coat the marinated chicken pieces in a mixture of wheat flour and semolina and fry these pieces, in a shallow pan, in adequate quantity of warm, any mild-flavour, vegetable oil; in medium to low heat for less than 5 minutes.
Serving size – Approximately 5
The leftover marinade was used to marinate round, thin slices of sweet potato; I used the slender and long sweet potatoes – (about 250g) marinate the slices for at least 10 minutes before deep-frying the slices in warm, any mild-flavour, vegetable oil; fry these slices until pale golden brown in colour, sprinkle a smidgen of salt over the fried sweet potato slices.

I was thinking this is called food art, keeping the chicken pieces in some stylish manner – I may not be good at it, however these chicken pieces are delicious.
