
On tiring days one desires to eat the simplest of food. My definition of a simple dinner is steamed rice topped with tomato rasam. Rasam is a traditional South Indian soup which is sour and watery.
My innovative approach to it:
- Submerge cassia or cinnamon stick in hot oil, followed by finely chopped tomatoes. (You have to be generous with the no. of tomatoes.)
- Complement in green chillies, crushed ginger and garlic, turmeric powder and salt.
- Allow the tomato pieces to melt.
- Pour warm water over the puree. Add-on additional flavour by enriching it with chicken or vegetable stock.
